Deviled eggs are very popular in the United States. The origins of this dish date back to ancient Rome. The eggs were boiled, seasoned with hot spices, and served at the beginning of a meal among the wealthiest. In the 13th century, stuffed eggs began to appear in Spain. By the 15th century, deviled eggs had already appeared in most of Europe. In medieval cookbooks, you could find recipes for boiled eggs stuffed with, cheese, herbs, cinnamon, cloves, and ginger. And finally, in the United States, deviled eggs began to appear in cookbooks in the mid-19th century.

Why are they called «deviled eggs»?
The word «deviled» appeared in Britain in 1786 and referred to dishes that included spicy or highly seasoned ingredients. In 1800, «deviling» became a verb to describe the process of putting spicy in meals. In some parts of the world, these eggs are called «stuffed eggs», «dressed eggs» or «salad eggs», to avoid using the term «deviled».
How to make deviled eggs?
It’s very easy and you probably have the ingredients at home, but the secret of delicious deviled eggs is boiling the eggs perfectly and not over-boil them to prevent the yolk from turning a green color.
What is the best way to boil eggs?
This is a very simple method, and in fact, it is the way I always use to boil eggs:
- Place the eggs in a pot and add water 1 inch above the eggs.
- Take them to the stove over high heat.
- Once the water starts to boil, cover the pot and remove it from the heat.
- Leave the eggs in the covered pot for 12 minutes.
- After 12 minutes, remove the eggs from the pot.
- Tip: To peel the eggs easily, place them in a cup with cold water and ice cubes for 10 minutes.

Ingredients:
- 6 eggs
- 1/4 cup mayonnaise
- 1 teaspoon white vinegar
- 1 teaspoon mustard
- Salt and pepper to taste
- Paprika to taste
Instructions:
- Cook the eggs using the method described above.
- Peel the eggs carefully so that the whites remain intact.
- Cut the eggs in half lengthwise
- Remove the yolks by placing them in a medium bowl and place the whites on a baking dish or egg tray.
- Using a fork, crush the cooked yolks and add mayonnaise, vinegar, mustard, salt, and pepper.
- Mix well.
- Just before serving, fill the egg whites with the mixture, using a spoon.
- Sprinkle paprika to taste.
- Enjoy!
Prepare them in advance
One thing I like about this recipe is that you can make it in advance. You can prepare it up to two days in advance by keeping the mixture in a resealable bag (Ziploc) and the whites in a covered container. You just have to fill them out just before serving. If you have leftovers, you can refrigerate them for up to three days.
Variation of deviled eggs
You can add your own ideas by selecting one of these options:
- Bacon pieces
- Jalapeño
- A pinch of cayenne
- Avocado (you can add it as a puree with the other ingredients before mixing.
- Pickles chopped into small pieces (My favorite option).
