I think chicken salads taste better when prepared with roasted chicken. Generally, I buy my roasted chicken at Costco or Sam’s stores as it is quite delicious and cheap. There are many recipes you can make with it. For example, a sandwich, a salad, a delicious soup, etc. This is one of the many versions I have to prepare a delicious roasted chicken salad. Besides at home, it has been a hit and my husband and kids left nothing on the plate. I hope you like it!

Ingredients:

  • 2 cups roast chicken cut in cubes.
  • 2 celery stalks, chopped
  • 6 strips chopped bacon
  • 1 large lemon
  • 1/2 cup mayonnaise
  • Pepper to taste

Preparation:

  • Crumble or cut the roasted chicken into small pieces.
  • Put the bacon in a large frying pan and cook over medium-high heat until golden brown. Set aside while it’s cooling down.
  • In a bowl, combine the mayonnaise, lemon juice, and pepper.
  • Add the celery, chopped bacon, and chicken.
  • Stir in all ingredients well.
  • Enjoy!
