Ripe Plantain Fritters, (Aborrajados) is a delicious Colombian dish from Valle del Cauca, in which a ripe plantain is used. It can be served as a side dish, appetizer or dessert.
To make aborrajados, plantain slices are cut, fried, flattened and filled with mozzarella cheese. Then, these are covered with a mixture based on flour, milk, and eggs; Finally, sugar and salt are added. Aborrajados can be prepared in different ways. For example, you can add some guava paste and cheese or prepare them only with cheese.
For this recipe, I have made some variations in order to make it gluten-free, and I have not added sugar to make it with fewer calories than the original recipe. If you do not want this gluten-free recipe, you can use normal all-purpose flour.
Ingredients to make Ripe Plantain Fritters (Aborrajados):
- 2 large ripe bananas (The blacker the peel, the sweeter the banana)
- Vegetable oil (In this recipe I fried it with coconut oil).
- 8 slices of mozzarella cheese
- Guava Paste (optional)
For the batter
- 2 eggs
- 4 tbsp gluten-free all-purpose flour
- 2 tbsp of milk
- Pinch of salt.
Directions
- Peel the plantains and cut crosswise into 8, 1 ½” chunks. (About 5 pieces are obtained from each plantain).
- Heat the oil over medium heat in a pan
- Add the plantain pieces in the hot oil and fry them approximately 3 minutes or until they turn a golden color.
- While the plantains are fried, you can prepare the batter: In a bowl, mix the flour and salt, add the eggs and add the milk. Mix until you get a smooth batter without lumps.
- Remove the plantains from the heat and drain on paper towels.
- Place the plantain chunks in the middle of two pieces of wax paper or plastic and flatten them by hand or with a plate.
- Place a slice of cheese and/or guava paste in the center of each plantain and cover with another previously flattened plantain, pressing the edges making sure they are sealed.
- Dip the aborrajados in the batter and fry them for 1 minute on each side or until golden brown. Remove from heat and drain on paper towels.
- Serve immediately and enjoy!
