Peel the plantains and cut crosswise into 8, 1 ½” chunks. (About 5 pieces are obtained from each plantain).
Heat the oil over medium heat in a pan Add the plantain pieces in the hot oil and fry them approximately 3 minutes or until they turn a golden color.
While the plantains are fried, you can prepare the batter: In a bowl, mix the flour and salt, add the eggs and add the milk. Mix until you get a smooth batter without lumps.
Remove the plantains from the heat and drain on paper towels.
Place the plantain chunks in the middle of two pieces of wax paper or plastic and flatten them by hand or with a plate.
Place a slice of cheese and/or guava paste in the center of each plantain and cover with another previously flattened plantain, pressing the edges making sure they are sealed.
Dip the aborrajados in the batter and fry them for 1 minute on each side or until golden brown.
Remove from heat and drain on paper towels. Serve immediately and enjoy!
