Best Roasted Chicken Salad
You can serve it with crackers, with a green salad, with avocado, in a wrap or make a sandwich. Enjoy it as a main dish, or as an appetizer.
- 2 cups roasted chicken cut in cubes.
- 2 celery stalks, chopped
- 6 strips chopped bacon
- 1 large lemon
- ½ cup mayonnaise
- Pepper to taste
Crumble or cut the roasted chicken into small pieces.
Put the bacon in a large frying pan and cook over medium-high heat until golden brown. Set aside while it's cooling down.
In a bowl, combine the mayonnaise, lemon juice, and pepper.
Add the celery, chopped bacon, and chicken.
Stir in all ingredients well.
