Ripe Plantain Fritters (Aborrajados de Plátano Maduro)

  • 2 ripe plantains
  • Vegetable Oil
  • 8 slices Mozzarella Cheese
  • 2 units Guava paste
  • 2 eggs
  • 4 tbsp Gluten-Free all purpose flour
  • 1 pinch salt
  • 2 tbsp milk


  • Peel the plantains and cut crosswise into 8, 1 ½” chunks. (About 5 pieces are obtained from each plantain).
  • Heat the oil over medium heat in a pan
  • Add the plantain pieces in the hot oil and fry them approximately 3 minutes or until they turn a golden color.
  • While the plantains are fried, you can prepare the batter: In a bowl, mix the flour and salt, add the eggs and add the milk. Mix until you get a smooth batter without lumps.
  • Remove the plantains from the heat and drain on paper towels.
  • Place the plantain chunks in the middle of two pieces of wax paper or plastic and flatten them by hand or with a plate.
  • Place a slice of cheese and/or guava paste in the center of each plantain and cover with another previously flattened plantain, pressing the edges making sure they are sealed.
  • Dip the aborrajados in the batter and fry them for 1 minute on each side or until golden brown.
  • Remove from heat and drain on paper towels. Serve immediately and enjoy!
