Oven Roasted Asparagus Recipe

Oven Roasted asparagus is an easy and quick side dish. They are very easy to make and you can serve it with fish, chicken, pork, or beef.

Asparagus is one of my favorite vegetables and I like to make them frequently when they’re in season. Baked green asparagus is a very healthy option because it is very low in calories. Asparagus is also an excellent source of fiber, folic acid, and vitamins A, C, and K. Consuming asparagus has countless health benefits including weight loss, improved digestion, and decreased blood pressure.

Most of the time, I prepare asparagus in a very simple way with only salt, pepper, and olive oil. However, there are different ways to make them more appetizing and one of them is adding Parmesan cheese and lemon. What I like most about this recipe is that it doesn’t take more than five minutes to make it before putting them to the oven.

How to make oven-roasted green asparagus?

Cut the end of the asparagus and discard it. The end of the asparagus is almost impossible to bite, even when cooked. Place the asparagus in a baking dish and add olive oil, salt, pepper, lemon juice and finally sprinkle with Parmesan cheese. Toss the asparagus so all the ingredients get mixed. Bring them to the oven at 425F for 12-15 minutes and you’re done.

There are other variations to give more flavor such as adding garlic or onion powder, thyme, oregano, laurel, basil, balsamic vinegar, butter, etc. You can also prepare an even simpler version with just asparagus, oil, and salt.

If you have leftovers for dinner time you can serve asparagus with risotto, pasta alfredo, or with a delicious quiche.

Ingredients
  

  • 1 Pound asparagus
  • 2 Tbsp Olive Oil
  • 3 Tbsp Parmesan Cheese
  • Salt and Pepper to taste
  • Juice of ½ lemon

Instructions
 

  • Preheat the Oven to 425°F
  • Cut the end of the asparagus and discard it.
  • Place the asparagus in a baking dish and add olive oil, salt, pepper, lemon juice and finally sprinkle with Parmesan cheese.
  • Toss the asparagus so all the ingredients get mixed.
  • Bring them to the oven at 425F for 12-15 minutes.
  • Before serving, you can sprinkle more parmesan cheese.
